Nobody reported there was an issue with the max CH setpoint default. So it hasn't changed in firmware 5.0 and going back to firmware 4.3 will not make things worse. There is no need to act like that is a big problem. You can easily downgrade your firmware to version 4.3. When using the Nodo Shop WiFi version of the OTGW, it is advised to use otgwmcu firmware version 0.4 on the NodeMCU. Via the built-in web interface the desired firmware version can be selected...

Maybe your thermostat does not request MsgID 26. I believe you are using the OTGW stand-alone. In that mode, the OTGW doesn't request the domestic hot water temperature by default. Of course I wouldn't suggest to connect the on/off signal to the OTGW if that wasn't supposed to work. The CF-MC Master controller of the floor heating only sends an on off signal to the central heating boiler.
The room thermostats do not send a signal to the boiler but to the servomotors of the distribution units.

I want to try it through windows.
For this I changed the IP address of the PC to 192.168.0.2
And I swapped the LAN cable for a LAN cable to the OTGW module.
And then tried to go to 192.168.0.254 via the web browser.
Unfortunately this didn't work.
