I had a working setup with Agpo Ferroli and Honeywell Round (dumb) thermostat.
So could be your thermostat is not accepting the overwrite.

All was working well untill the Ferroli caused the notorious overheating issue, so replaced it with a Remeha Calenta Ace.

You did not provide details on how you tried the setup of etwist and OTGW and what the OTGW reported. Try setting the OTGW to monitor mode. Maybe your thermostat does not request MsgID 26. I believe you are using the OTGW stand-alone. In that mode, the OTGW doesn't request the domestic hot water temperature by default.
