I have a question about my network setup.

My current setup:

Internet enters via a Speedtouch 510 router.
The Speedtouch (100MB/s) router has is connected to a (100 MB/s) 10 port switch. which in turn connects to:
1 Fritzbox which is used for VOIP and WLAN.
2 Xbox
3 Sonos (music system)
4 Sonos (music system)
5 Sitecom WIFI extender
6 Homeseer server
7 Switch 100MB/s (upstairs)
8 IP Camera
9 Xtreamer (mediaplayer)

The Switch upstairs currently connects to 2 PC's and a printer.

My question is, would it improve my networkspeed if I swap my current switch for a gigabite switch or does every part of your network need to be gigabite capable?

(all wiring is OK for gigabite speed).

gigabit ethernet always improves the speed if your devices can handle that.
most of your devices are 100 mbit.
On this devices you will not see any different.
if you go for gigabit look on this forum form green switches.

There is one thing that I am not sure about:
when there is alot of traffic at the same time, let's say 4 connections doing 80 mb/s each. Will the switch limit the traffic to 100 mb/s (25mb/s each) or will it alow 320mb/s to pass through?

This depends on the switch that you are using.
most of the old home switch can handle max of 1 poort.
on a 100 mbit network is that 9,8 mb per second.

The Xtreamer player is that the new one with the latest chip?

Yes. With the Realtek chip inside. I use to own a Egreat, but it broke down after a lightning strike.

in the past i did some tests about the effect of gigabit switches on the network. Even when all nic's are 10/100 then a gigabit switch will show some improvement in speed at the nic's. Did the test mutiple time with different combinations of nic's and switches. It also reveals (but that's no surprise) that there is a speed difference between switches, even if they are the same speed categorie (i.e. 10/100 or 10/100/1000)

You have to look for the backplane capacity. The port capacity is the limit for the specific port, but if multiple streams from/to different ports, than you have to look for this backplane specification. So lets say you have a 8 port 100Mb/s switch. And lets say the port speeds are fully used (for file transfers). And there is a connection between 1 and 2, 3 and 4, 5 and 6, 7 and 8, your backplane capacity should have at least 400 Mb/s. If there is also a connection for example between 1 and 3, than port 1 and 3 can't handle the full capacity of both transfers.
