On the Oregon page on the RFXCOM website it is mentioned that :

The maximum number of sensors per category is limited by the number of channels available on the sensors in each category.

Would this mean that channels in each category are not affected by channels in other categories. Could I, for example, run a total of 14 Oregon sensors (3 TEMP1 type, 3 TEMP2 type, 3 TH1 type and 5 TH4 sensors) in parallel via a RFXCOM USB Receiver without getting into trouble ?

correct, sensors in other categories can be used on the same channel nr.

I have an WMR928NX which only allows 3 more sensors (which I also have), but the RFXtrx433 managed to get data from my extra THC238!

RFXCOM receivers have no limitation in the number of sensors.
