So much info.. What to get (big project)?

Hi all,
I see that I'm not the only newbie here.
I did read a lot on this forum, but I'm still not sure what 'domotica' to get.
Basically I'm doing a complete makeover / redo of my new house (all walls are striped at the moment, all rooms (and I mean all rooms) have network lines (over 300 meters), TV, and phone connections. (builders will still be in the house for an other month and a half)
I've only started reading about all the nice controllable units some days ago, and at the moment I'm lost in the info, and bookmarks that I've got :/
Anyway.. The house is located in a "city heating" area, so I do not have a "boiler" of my own. I would love be able to monitor the heating.
Besides this I will also be running my own "test" server (Linux) at the house connected to a glas fiber line
Running an extra Windows server (for software) will not be a problem.
It would be great if I could controll some 'domotica' units (lights) from the WAN.
Anyone here who can give me some nice info on what type of 'Domotica' I should start off with?
My budget (for now) is 1000 euro's
Location of the 'project' is the Netherlands (Almere)
